Ingredients:

  • 500 grams of fresh okra, washed, dried and cut into 1 inch pieces
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, finely chopped
  • 2 green chillies, slit lengthwise
  • 1 tsp cumin seeds
  • 1 tsp ginger-garlic paste
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/2 tsp garam masala powder
  • Salt, to taste
  • 2 tbsp oil

Instructions:

1.     Heat the oil in a pan over medium heat. Add cumin seeds and let them crackle.

2.     Add onions and green chillies and sauté until the onions turn translucent.

3.     Add ginger-garlic paste and sauté for a minute.

4.     Add chopped tomatoes and cook until they turn soft and mushy.

5.     Add all the spice powders (coriander powder, cumin powder, turmeric powder, red chilli powder, garam masala powder) and salt. Mix well and cook for 2-3 minutes.

6.     Add the chopped okra and mix well. Cover the pan with a lid and cook for 10-12 minutes, stirring occasionally.

7.     Once the okra is cooked, remove the lid and cook for another 2-3 minutes, until the excess moisture evaporates and the masala coats the okra.

8.     Turn off the heat and garnish with fresh coriander leaves.
