Ingredients:

  • 1 kg mutton (goat meat), cut into small pieces
  • 4-5 medium-sized tomatoes, chopped
  • 1 onion, chopped
  • 2-3 green chillies, chopped
  • 2 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • Salt to taste
  • 2 tbsp cooking oil
  • Fresh coriander leaves for garnishing

Instructions:

1.    Heat the cooking oil in a karahi (wok) or a deep frying pan on medium-high heat.

2.    Add the cumin seeds and let them splutter.

3.    Add the chopped onion and sauté until it turns golden brown.

4.    Add the ginger-garlic paste and sauté for another 2-3 minutes.

5.    Add the chopped tomatoes and green chillies and cook until the tomatoes are soft and mushy.

6.    Add the coriander powder, red chilli powder, turmeric powder, and salt. Mix well.

7.    Add the mutton pieces and mix well with the tomato-based gravy. Cook for 5-10 minutes.

8.    Lower the heat to medium-low, cover the karahi with a lid, and let the mutton cook for 30-40 minutes, or until it is tender and the oil separates from the gravy.

9.    Once the mutton is cooked, garnish with fresh coriander leaves and serve hot with naan or roti.
