South Asian Chicken Dish:
Chicken Karahi is a popular Pakistani and North Indian dish
that is made with bone-in chicken cooked in a wok-style pan known as a karahi.
The chicken is marinated in a blend of spices such as cumin, coriander,
turmeric, chili powder, and garam masala, and then cooked with tomatoes,
onions, garlic, ginger, and green chilies.
To make Chicken Karahi, first, heat oil in a karahi or a Deep
Frying pan. Add onions and cook until they turn translucent. Then, add the
marinated chicken and cook on high heat for 5-7 minutes until it turns golden
brown. Next, add tomatoes, garlic, ginger, and green chilies and cook until the
tomatoes break down and form a thick gravy. Finally, sprinkle some chopped
coriander leaves on top and serve with naan or roti.
Chicken Karahi is a flavorful and spicy dish that can be
enjoyed as a main course with rice or as a side dish with naan or roti.
Ingredients:
1 kg bone-in chicken, cut into small pieces
3-4 tbsp cooking oil
2 medium onions, sliced
2-3 tomatoes, chopped
2-3 green chilies, chopped
1 tbsp ginger paste
1 tbsp garlic paste
1 tsp cumin seeds
1 tsp coriander powder
1 tsp red chili powder
1 tsp garam masala powder
Salt to taste
Fresh coriander leaves, chopped for garnish
Instructions:
In a mixing bowl, add the chicken pieces and sprinkle cumin
seeds, coriander powder, red chili powder, garam masala powder, and salt. Mix
well and let it marinate for at least 30 minutes.
Heat oil in a karahi or a deep frying pan. Add sliced onions
and cook until they turn golden brown.
Add the marinated chicken and cook on high heat for 5-7
minutes until it turns golden brown.
Add chopped tomatoes, ginger paste, garlic paste, and green
chilies. Mix well and cook for another 10-15 minutes on medium heat until the
tomatoes break down and form a thick gravy.
Check the seasoning and adjust salt and spices according to
your taste.
Garnish with fresh coriander leaves and serve hot with naan
or roti.
